Derek Gherkins

Chef Derek Gherkins was a Chef in Park City for 15 years leading such acclaimed restaurants as Grappa on Main Street, and Ghidotti’s. He has worked in many different cuisines, and has strong connections with local purveyors. Derek takes pride in using local, as well as authentic ingredients. He comes from and helped create a made-from-scratch kitchen culture – a culture that always puts the customer first. Derek started as a dishwasher, hand washing at a restaurant with only six tables. He went on to build it into two locations, becoming the Head Chef, overseeing a total of over 250 seats. As a key leader with Bill White’s Restaurant Group, Derek was sent to solve problems, and improve and grow restaurants. He brings years of experience on menu development, and with the expansion, and creation of new restaurants for Bill White. He also has experience as the Executive Chef & Director of another Culinary School. Derek loves teaching, learning and sharing knowledge. “If a cook who cares keeps trying, I will give them everything I have.” Derek has a B.S. in Nutrition and Food Science – Culinary Arts and Management from Utah State University. He is fluent in Spanish.
